Our harvest is over for this year and it has been an exciting time. Yield was marginable but fruit was good with a good mixture of green and purple olives along with some that seemed to ripen faster for what ever reason.Oil content seems to be around 40 - 45 gallons per ton .

The olives that we put up are in the sixth week and 5th week and are progressing fine. We used a mixture of ripe and unripe olives and they are being cured with the same sea salt brine and red wine vinegar solution. The varieties we used are the ones we grow- leccino , pendolino, maurino, frantoio and we also used some mission olives that we have.
